After an acid or alkaline pre-treatment, the raw materials are transferd into cooking vats for the extraction in purified hot water.
The gelatin solutions undergo physical(filtration)and chemical(demineralisation)purifying, and are concertrated by ultrafiltration and then vacuum evaporation.
