Function and characteristics
Saccharifying enzyme, also known as glucoamylase, besides can hydrolyzeα -1, 4 glycosidic bonds of starch from non-reducing end to produce glucose, and also can slowly hydrolyze α -1, 6 glycosidic bonds. At the branch ofα -1, 6 bonds, it slice off α -1.6 bonds first then slice off α -1.4 linkages. Therefore, it can successively slice glucose unit of amylose from the non-reducing end to produce glucose.
